Abstract

Dietary guidelines are a fundamental tool in the nutritional education of the Mexican population. The objective of this study was to evaluate the level of adherence to the new dietary guidelines for the Mexican population of 2023 among nutrition students at the Universidad Veracruzana in Xalapa campus. The food groups studied were fruits and vegetables, animal-origin foods, legumes, fats, dairy products, cereals and tubers, and water. A cross-sectional analysis was conducted, collecting socioeconomic variables such as age, sex, employment, and social security. Additionally, food consumption was obtained by applying a previously validated food frequency consumption survey. A population of 213 individuals was analyzed, consisting of 37.1% men and 62.9% women aged 20.92 ± 2.51 years who were enrolled in semesters from first to eleventh. It was found that total weekly compliance was 24% for fruits and vegetables, 23% for animal-origin foods, 1% for legumes, 12% for fats, 55% for dairy products, 13% for cereals and tubers, and 65% for water. Additionally, underconsumption was identified in groups such as fruits and vegetables and legumes according to the reported adequacy percentages, and overconsumption in groups such as animal-origin foods and water. In conclusion, nutrition students at the Universidad Veracruzana show low compliance percentages with the recommendations, indicating low adherence to them.
